Broc’s Favorite Sandwich
Our favorite lunch sandwich!
This sandwich is all about contrast. Warm, melty cheese. Cold, crunchy lettuce. Soft bread with crispy edges. It’s simple, but every detail matters.

Ingredients
For the sandwich
– 2 slices sourdough bread
– Butter, softened
– Medium cheddar cheese, sliced
– White cheddar cheese, sliced
– Thinly sliced ham
– Thinly sliced turkey
For the lettuce spread
– Iceberg lettuce, finely chopped
– Sweet onion, very finely chopped
– Mayonnaise
– Salt and pepper, to taste
– Italian seasoning
– Red wine vinegar, optional but recommended
Instructions
Start by buttering one side of each slice of sourdough. Heat a skillet over medium heat.
Place the bread butter-side down in the pan. Layer generously with both medium and white cheddar cheese. Let it grill slowly until the bread is golden and crisp and the cheese is fully melted and gooey. This is not the time to rush.
While the sandwich grills, make the lettuce mixture. In a bowl, combine the finely chopped iceberg lettuce and sweet onion. Add enough mayonnaise to lightly coat everything, not drown it. Season with salt, pepper, and Italian seasoning. Add a small splash of red wine vinegar if you like a little tang. Mix well and set aside.
Once the grilled cheese is ready, remove it from the pan. Carefully pull the sandwich apart while the cheese is still warm and stretchy. Layer in the ham and turkey. The thinner the slices, the better. Don’t be shy here.
Spread the lettuce mixture onto one side of the sandwich, close it back up, and press gently.
Slice in half and eat while it’s still warm.
